Head Chef
Healeys Cornish Cyder Farm is a family-run, open all year-round visitor attraction and home to the thriving production house of the famous Rattler Cyder! Since the company was founded in 1980, Healeys has grown exponentially, with listings across large supermarket chains such as Sainsbury’s, Tesco, Asda and Morrisons, in addition to our regional and national wholesale partners. With a multi-faceted production facility specialising in a range of products from ciders, wines, preserves and spirits, our business is not only exciting place to visit and shop but a great place to work.
We are seeking a highly motivated and experienced Head Chef to lead our team here at Healeys. As a Head Chef, you will be responsible for overseeing the operations of our kitchen and ensuring exceptional food is delivered to our guests.
Your shifts will primarily be undertaken during the daytime, unless we have a function where some evening work will be required.
Salary - £30,000 per year
Duties & Responsibilities
- You will be responsible for running all kitchen outlets including, planning labour requirements, stock and ordering, SFBB management and menu creation. In line with company budgets
- Recruit, onboard, train and constantly monitor your staff and their performance, with customer service and quality of offering as a top priority.
- Preparation, cooking and serving of food to a high standard. Have excellent knowledge of allergens and how to manage them.
- Maintain a 5 Star EHO rating.
- Responsibility for ensuring the implementation of Safer Food Better Business at all times.
- Ensuring that cleaning and housekeeping duties, including scheduled deep cleans are being carried out to the Healeys standard.
- Upselling and add on sales of own brand products as well as other menu items to increase average spend per person.
- Excellent product knowledge of own goods as well as Cornish goods and ensuring that you promote these when designing menus.
- Along with the Food and Beverage Manager introduce new initiatives to maximise spend per head.
- Be in control of stock and wastage control, minimize loses through clever menu development.
- When designing menus ensure food profit margin to be maintained as per budget.
- Become an expert on Healeys policies, and procedures for Health & Safety and Food Safety. Use the tools provided to monitor, record and manage all requirements. This will ensure the safety and wellbeing of your team and our customers. If something is wrong raise it with the Food and Beverage Manager work together to fix it quickly.
- To be open to completing tasks which may fall outside of your role or remit with a positive, sleeves rolled up mentality.
Work Experience
- Experience working in a busy hospitality environment
- Kitchen management experience
- Proven experience at a similar level
- Menu planning and budgeting
- A passion for the drinks and hospitality experience
Qualifications
- NVQ Level 3 in Professional Cookery
- Current Food hygiene Certificate
